Mmm this one is so delicious! Just throw all this stuff in a big pot (in this order, with the heat on the whole time, stirring occasionally).
This makes ALOT, you may want to cut the recipe in half.
cover bottom of pot with olive oil
1/2 onion, chopped
1 teaspoon ground cumin
2 tablespoons dried oregano
1 tablespoon salt
2 celery stalks, chopped
2 bell peppers (whichever colors you like), chopped
2 jalapeno peppers, chopped
3 garlic cloves, chopped
2 4oz cans of chopped green chile peppers, drained
1 12oz package of meatless crumbles (from the frozen aisle – like Boca or Morning Star)
2 cans of peeled, crushed tomatoes
1/4 cup of chili powder (yes, it’s a lot)
1 tablespoon pepper
1 can of kidney beans, drained
1 can of black beans, drained
1 can of pinto beans, drained
1 can of corn, drained
Heat until hot – no need to worry about cooking time since it’s all veggies (you don’t get sick from undercooked veggies!)
