Ingredients
Pita bread
Veggies – I like to use tomato, onion, parsley, cucumber, and olives
Hummus
Falafel balls – I use Veggie Patch’s pre-made falafel balls, but you could make your own.
(I also sometimes useVeggie Patch’s spinach nuggets instead of their falafel, and YUM!)
Directions
1. Smear hummus on the inside of the pita pocket.
2. Put in the falafel balls and veggies.
3. Munch.

I love falafel. I havent tried any of the pre-made/frozen ones yet, but I will have to do so this week. Its my favorite meal when we go out for Greek food at work.

I have never tried pre-made falafel – usually make my own but it does take time. Hopefully having an vegetarian short-cut will encourage others to not eat meat at least one day per week. Happy Meatless Monday.
