Tofu and spinach stuffed shells, to be exact. I subsituted tofu for the traditional ricotta to make these both healthier & kinder.
Boil the shells (they will grow in size).
Cook the spinach. Can use fresh or frozen.
Once the spinach is cooked, add crumbled firm tofu. Mix.
Fill the shells with the spinach & tofu mixture.
Cover the filled shells with marinara sauce.
Top with cheese (like mozarella or soy mozarella).
