Fill a jumbo tortilla with your choices of the following:
Mexican rice
black beans
corn kernels
spinach (cooked from frozen, or fresh)
cheese or soy cheese
cilantro
avocado or guacamole
salsa or tabasco
Tuck in the ends, roll it up & wrap with foil to hold it closed.
This burrito turned out so delicious!

:) Being a self-proclaimed Mexican food connoisseur (lived in San Antonio, TX for 18 years, in Austin, TX for 4), I believe that a great burrito must start with Mexican rice (not this white rice business they’ve got going on at Chipotle)! Plus, this burrito’s got spinach – mmm.
Don’t get me wrong, I do love Chipotle. Although I don’t consider it authentic by any stretch of the imagination, it is certainly tasty. And, even though I order veggie, I LOVE that Chipotle serves humanely raised meat. Proof that there are other options to inhumane industrialized agriculture.
