A veganized version of the original.
Ingredients:
potato
olive oil
soy cheese
bacon flavored bits
chives
salt & pepper
Directions:
1. Bake the potato (either in the oven or in the mircowave).
2. Once the potato is baked, cut it in half and carefully scoop the potato out of the skin. Save the skin.
3. Mash the potato with a fork and mix in olive oil to help soften mashed potato.
4. Add soy cheese, fake bacon bits (most bacon bits are fake, but check the labels), chopped chives, and salt and pepper to the mashed potato.
5. Scoop the potato mix back into one half of the skin and return the stuffed potato to the oven for about 15 minutes.
