A variation on the classic Italian dish, spaghetti puttanesca, which translates to “whore’s spaghetti” because the ingredients are cheap and easy to find.
This vegan version of the sauce does not contain anchovies. Of course spaghetti can be used instead of tofu, but tofu is a fantastic source of vegetarian protein.

Ingredients:
1 package of extra firm tofu
6-8 cloves of garlic
2 roma tomatoes
Mixed olives, chopped (kalamata, black, green – get the good ones from the olive bar, they really do taste that much better!)
1 spoonful of capers
1 spoonful of crushed red pepper flakes
thyme (fresh is best, but dried will do)
oregano (fresh is best, but dried will do)
Directions:
1. Thinly slice the garlic cloves and quickly saute them in olive oil (be careful not to burn them).
2. Add the red pepper flakes and cubed tofu. Saute until the tofu is browned (can take a little while – 10 mins or so).
3. Add tomatoes, thyme, and oregano, saute for a few more minutes (5?).
4. Add the olives and capers and saute until heated through.

My husband and I are almost at our two year mark going vegetarian. I actually fell off the wagon a few months ago and ate meat about a handful of times…my iron levels got really low and I was “told” I needed to eat meat. I started taking an iron and b12 supplement and like magic those intense cravings went away…unfortunately the guilt didn’t. I have been on so many websites but for some reason yours has affected me the most. Your information is great and your recipes are uncomplicated and delicious. We are now eating more like vegans and we feel fantastic…this really is a learning process…thank you for making it easier!

Val thanks so much for the kind words! And I’m glad to hear you’re back on track. Don’t get down on yourself – no vegetarian is perfect! It’s about doing the best that you can and getting back on track after you slip up. Interestingly, this is the second time someone’s mentioned low iron to me this week – maybe this calls for a post about iron?!
