This is my absolute favorite thing to bring to parties. It is incredibly easy and always gets rave reviews. It can be eaten as a salad, or you can dig in with tortilla chips.

In a large bowl, mix:
1 can black beans, drained & rinsed
1 can corn, drained
1 avocado, chopped
1 large tomato, chopped
1/2 purple onion, chopped
1 jalapeno, chopped
1 handful cilantro, chopped
squeeze the juice of 1 lime
top with red wine vinegar and olive oil (like salad dressing)
Mix it all together… fantastico!
I made this for a bachelorette party last weekend, which reminds me… One of my friends made a 7 layer dip using vegan sour cream and soy cheese and everyone at the party gobbled it down with no clue that it was vegan. (Just wanted to throw that out there!)
