Meatless Monday #49: Hummus Quesadilla

This vegan quesadilla uses hummus instead of cheese – and it tastes so good!! (See also the pizza that uses hummus instead of cheese.)

Ingredients

2 tortillas
Hummus (I used homemade hummus with both chickpeas and kidney beans, that’s why it’s so dark)
Olive oil

Quesadilla fillings – I used:
Spinach
Green onion
Tomato
Cilantro
Guacamole (made with this recipe) – avocado chunks inside the quesadilla would be equally as delicious

Directions

1. Spread some hummus on a tortilla and place the tortilla in a pan with some oil. Turn the stove on medium-high or high.

2. Top the tortilla with quesadilla fillings.

3. Spread hummus over the second tortilla then top the quesadilla with it.

4. Fry until the bottom tortilla is browned and slightly crispy. Then the hard part: flip the quesadilla over with a spatula. Fry until the other tortilla is browned and slight crispy.

6. Cut and serve.

    I was just thinking about you today! Wondering how you’re doing… so, how *are* you doing? Feel free to respond via email. :)

    I’ve got a question I’d like your opinion on, anyhow. Suppose you have some family/friends who are definitely NOT vegan/vegetarian/animal-rights-inclined, and have never shown an interest in becoming so. And suppose you read an article or see a film that you think might just convince them otherwise, but you know that in the process, it would cause some very painful thoughts for them (of the “oh god, those poor animals” variety, and perhaps of the “damn, molly, why did she send me this” variety).
    Do you, then, feel obligated, or feel like you have the right to send them this article/film? Or do you refrain, respecting their choice to consume animals, and acknowledging their right to do so without interfering in their business?

    I know, a heavy question for a Meatless Monday post, but… here you were. (I was going to email you anyway, you just beat me to the punch – haha!)

    I hope you’re doing well, and that Christmas has many presents in store for you. Write to me if you have the time. I’d like to hear how you’re doing. :)

    Hey Molly, Thanks for thinking of me :)

    This is really a sticky situation… how to give someone vegetarian information without making anyone feel bad about themselves and without becoming the dreaded “preachy vegetarian.” My general rule of thumb is to NOT bring up the topic myself (or to NOT send the videos/articles on a whim). I know it’s so hard to refrain, especially if you think it could change someone’s mind, but the approach could really make all the difference. And if they perceive you sending this information as preachy or condemning, they will not be receptive to it.

    I think the best approach is to wait until vegetarianism comes up in a conversation, then you can tell them, “I actually saw this video that you should watch.” Or you could email it to them later with something like, “Since we were talking about meat yesterday, I thought you might be interested in this video.” I’ve found that my vegetarianism seems to come up a lot in conversation (do other veggies find that too? or maybe it’s because of the blog?)

    What do you think? Maybe not the answer you were hoping for?

    Oh, you are so right! See, I *knew* you were the perfect person to ask. :)

    And it’s not just you – vegetarianism does come up a lot. I think it’s because we’re “weird.” Like lab specimens or something. If we were cancer patients, that would come up in conversation at an abnormal rate – but it would just make everyone uncomfortable. With vegetarianism, everyone is happy… at least until factory farming comes up. Haha!
