Meatless Monday #57: Turnips Three Ways

Every CSA delivery so far has included turnips and I have to admit, they’re not exactly my favorite vegetable. It’s not that I think they’re bad, I just think they taste like nothing. So finding tasty ways to use them has been an interesting challenge.

Third CSA delivery

Mashed Turnips
Make mashed turnips just as you would make mashed potatoes. Peel, boil, then mash the turnips with some soy milk and Earth Balance buttery spread. You can also mash turnips with potatoes and have a mashed turnip/potato mix.

Roasted Turnips
Roast turnips just as you would roast other vegetables. Peel, then cut into small pieces. I put the turnips with brussels sprouts and cauliflower into a Ziploc bag with olive oil, lemon juice, and lemon pepper seasoning. Shake the bag well to coat the veggies. Then roast the veggies in the oven at 350 for 20 minutes, or until veggies are soft.

Turnips with Pears and Honey
There are many variations of this recipe – here is one. This is what I used:

Ingredients
Turnips, peeled and sliced
Pears, sliced
1-2 tbs honey
pine nuts (chopped walnuts would also be good)
chopped parsley
olive oil

Directions
1. Cook the turnips and pears in a pan with some olive oil.
2. When the turnips are soft, drizzle some honey over the turnips & pears.
3. Top with chopped parsley and pine nuts.
