Ingredients
Potatoes (I tried both golden and russet and preferred the russet for this)
Marinara sauce
Squash & zucchini
Optional: Fresh basil, vegan Parmesan and/or nutritional yeast (a great, natural source of B12!)
Directions
1. Bake the potatoes. (I baked mine in the microwave.)
2. While the potatoes are baking, cut up the squash and steam/sautee it to desired firmness.
4. Heat the marinara sauce (either stovetop or microwave).
5. When the potatoes are done baking, cut them in half (and I mash up the insides inside the skin a little bit) and top with squash, marinara, Parmesan/nutritional yeast, and basil.

This looks really good. I eat meat but I also love vegetables. Your recipes are very very helpful and healthy as well. Now I know what to make out of vegetables. Keep on posting!
