I topped my squash tacos with a raw, vegan sour cream that I learned to make at a Whole Foods cooking lesson. It’s so easy to make and tastes so good! It would also make an awesome salad dressing or topping for other veggies, like cooked greens.
Ingredients
Various types of squash (I used a yellow squash, a calabacita squash, a pattypan squash, and a small eggplant)
Various types of peppers (I used a purple bell pepper, a banana pepper, a shishito pepper, and a jalapeno)
Onion
1 can of corn
1/2 packet of taco seasoning
Tortillas (I used corn)
For raw, vegan sour cream:
1 cup raw cashews (not roasted, nor salted)
1-2 tsp apple cider vinegar
1-2 tsp lemon juice
water (as needed)
Directions
1. Chop all the squash and peppers and steam them, with the corn, in a pan with some water.
2. Once the veggies are soft enough to your liking, add the taco seasoning (you may need to add a little more water to help mix in the taco seasoning).
3. Optional: To make the raw, vegan sour cream, combine the cashews, vinegar, and lemon juice in a food processor. Slowly add water as needed until the mixture reaches a creamy, sour-cream-like consistency.
4. Serve the veggies inside a tortilla. I topped mine with the raw, vegan sour cream, salsa, and some tabasco.
PS – This makes awesome leftovers! Mmm leftovers…

That is a very interesting sour cream replacement.
If you have the opportunity to get some fresh corn, you can cut it right off the cob and it makes the most incredible tacos. Canned corn is tasty too, but sh corn in a summer taco is heavenly.
