This hummus is made with beets instead of chickpeas which makes for an awesome variation!
Ingredients
3-4 small to medium beets, cooked (I boiled mine, but you could also bake them) and peeled
2 tbs sesame tahini
Juice of 1 lemon
1-2 garlic cloves
1 tbs ground cumin (optional)
salt to taste
Directions
1. Combine all ingredients in a food processor until smooth. (Add water, if needed to make hummus smooth.)

I’m having a hard time with “beet” “hummus,” such a hard time that I might have to try it. :)
