Ingredients
Roll or baguette
Your favorite hummus
1 can artichoke hearts
Any or all of the following:
Olives (I used kalamata)
Spinach
Roasted red peppers
Tomato slices
Sun-dried tomatos
Eggplant slices
Mushroom slices
Fresh basil
Directions
1. Preheat oven (or toaster oven) to 400.
2. Assemble all ingredients into a sandwich.
3. Wrap sandwich in foil and bake for 15 minutes.
I served mine with these baked sweet potato fries.

Actually a very good point. You eat healthy and you avoid unnecessary transportation and the gas that goes with it.

At first I thought this sandwich would ruin my diet plans. Then I saw the ingredients and was amazed. I am actually looking at a delicious and healthy sandwich. And the best part is, the ingredients are easy to find and the sandwich is fun to make.
