Portobello Mushrooms
Bell Peppers
Onion
Black beans
Your favorite fajita toppings, like:
Salsa
Avocado
Jalapeno
Cilantro
Directions
1. Cook the portobello, bell pepper and onion in a pan with some olive oil.
2. Assemble ingredients into fajita tacos!

I don’t think I’ve ever had mushrooms in fajitas, so must thank you for this introduction, one that I will have to keep in mind when I am wondering what to do with the extra mushrooms.
