I’d never bought fennel before, so when it arrived this week in my CSA box, I wasn’t quite sure how to use it. A quick google search revealed that really the only part worth eating is the bulb (technically you can eat the stalks and fronds, but the stalks are tough and the fronds are really just more of a garnish).
So for my first experience with fennel, I went for a basic fennel and citrus salad. And I absolutely loved it!
Ingredients
1 fennel bulb
1/2 grapefruit
handful of walnuts (or almonds or pine nuts)
a few pinches of dill
apple cider vinegar (red or white wine vinegar would work as well)
olive oil
salt and pepper to taste
Directions
1. Cut the stalks (& fronds) off the fennel bulb and discard the stalks (& fronds).
2. Slice the fennel bulb as you would slice an onion.
3. Add cut grapefruit pieces, walnuts, and dill to the sliced fennel.
4. Dress with apple cider vinegar, olive oil, and salt and pepper.

I think I’m going to try to sign up for a CSA this year, if for no other reason than people I know keep trying new veggies because of it. I want something to force me to try fennel. Or daikon, or something.

You definitely should! It’s so much fun! I love the day I get my box of veggies – it’s always a surprise what will be in there! And it’s introduced me to so many new veggies. Ever had (or even hear of) kohlrabi? I hadn’t until it was in my CSA box! And it’s actually quite a fun challenge to find ways to use veggies that you would never have bought on your own (like turnips and rutabagas).

I’ve heard of kohlrabi – even seen it – but never been brave enough to buy or try it. It’s weird… what the heck am I scared of? I’m going to go look up the local CSA again and see what I have to do to get signed up!

Yum! I really like fennel, and this combo sounds so very interesting. It goes well with the grapefruit? Will have to give it a try – looks so simple!

Yes, the grapefruit and fennel are so good together! I feel like orange or mandarin orange would work well too, but the grapefruit was just perfect!
