30 Days of Vegan: Day 1

For the next 30 days I’ll be posting my vegan meals. I already eat mostly vegan, but I do eat dairy when eating out or when eating with friends (parties, friends prepare dinner, etc.) I decided that this month I’m actually going to do a full 30 days of vegan, no matter if I’m eating out, or with friends, or whatever any of my previous exceptions have been.

And I’m going to post all of my meals along the way to hopefully give y’all ideas for how you too can easily eat vegan. These won’t be fancy, gourmet meals. These will be average, everyday, real-life, I’m-too-busy-and-too-tired-to-spend-hours-cooking, vegan meals.

Day 1.

Breakfast: Oatmeal with dried cranberries, walnuts, and cinnamon

Lunch: Field Roast sausage dog with mustard and ketchup, Bush’s vegetarian baked beans, and salad with lettuce, tomato, olives, olive oil and vinegar
I’m a big fan of the Field Roast sausages – they’re really delicious!

Snack: Raw “granola” bar (that doesn’t actually have any granola in it). Ingredients: Organic pumpkin seeds, organic figs, organic dates.

Dinner: Whole wheat pasta with spinach, artichoke hearts, great northern beans, and tomato sauce.
I always add beans to pastas – it’s a really easy way to add more protein.

    Hi Angie, I am also doing 30 vegan days this month. I currently live on a small island in Thailand so I am quite challenged in many ways ;) I am sure though I can make some of your meals or at least get some ideas. Thanks for sharing :)

    Hi Angie, What a great idea! I was going to do a juice cleanse, but it’s WAY too cold for that now. I’ll start next week, and use your recipe ideas from the week before. Great way to start a clean new year! :o)
